Eve’s Apple Pie

For the dough:
For the filling:
10 sour apples / ± 750g
Grated rind of 1 lemon
1T of cinnamon
Preheat your oven to 180 degrees celsius.
Knead the butter, flour, sugar and 1,5 eggs together into a firm ball. Let it rest for 15 minutes in a cool spot. Once rested, roll it out into a big round sheet and press it into a greased cake tin so that the bottom is covered completely and the sides are ± 4cm high. Keep the left over dough for the top.
Peel and core the apples and slice them into small cubes/pieces. Mix them with the sugar, cinnamon, raisins, and the grated lemon rind.
Put the apple mixture into the cake tin and lay the left over dough in thin strips on top (in a checkered shape). Press on the edges slightly so that the strips are firmly secured. Use the leftover egg to brush over the pastry.
Bake the pie in the warm oven until light brown and cooked. ± 1 hour.
